Warm mushroom and goat cheese salad

One of my favorite salads is this one, perfect for this season of the year.


Ingredients (4 servings)
1 bagged salad mix
2 spring onions
1 ripe avocado large or two small
1 large tomato
200 g fresh goat cheese, cut into rounds
3 or 4 tablespoons honey
300 g of fresh mushrooms 
Salt and pepper to taste
2 cloves of garlic

Balsamic vinegar reduction
Extra virgin olive oil
Salt to taste

Wash and chop all the vegetables.

In a skillet pour a dash of extra virgin olive oil and brown the garlic, finely chopped.
Sauté the mushrooms, add salt and pepper to taste and set aside.


In another small skillet pour the honey and flip the goat cheese rounds to lightly melt both sides. Set aside.

Place on the serving dish some lettuce, tomato, onion and avocado.
Season with salt, olive oil and reduced balsamic vinegar to taste and toss.

Top with a layer of warm mushrooms and some goat cheese rounds.
Pour the honey left in the skillet over the salad.


Serve immediately and enjoy!
