Diz and I have been trying to get out of our cooking funk and have decided to try a new recipe each week. Well thank goodness for Pinterest is all I have to say about that…I have found some truly delicious dishes there that have been hits with us and our friends. Last night we had Rach and Jake over for dinner (I love the fact that we are closer to our friends now!) and I made a tortellini and veggie bake that I found on Pinterest a few weeks ago. With some slight modifications (LOTS of garlic, and more veggies) we had a great dinner.
Here is my slightly tweaked recipe for the Tortellini and Veggie Bake:
Ingredients
2-1/2 cups of refrigerated three cheese tortellini
1 medium carrot, thinly sliced
1 ½ cups sugar snap peas, halved crosswise
1 tablespoon margarine or butter
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
1 ½ cup sliced fresh mushrooms
1/3 cup chicken broth
2 teaspoons dried oregano
2 teaspoons all-purpose flour
2 TBSP minced garlic
Large dash of pepper
1 cup 1% milk
1 8-ounce package of lite cream cheese
1 tablespoon fresh squeezed lemon juice
1 ½ cup halved cherry tomatoes
1 small red sweet pepper, coarsely chopped
2 tablespoons flaked Parmesan cheese
Directions
Cook tortellini in boiling salted water according to package directions, drain when done. Meanwhile, heat butter in a large skillet. Add chicken, garlic and mushrooms, and cook about 5-7 minutes or until chicken is no longer pink. Remove from skillet. Shake together chicken broth, oregano, flour, and pepper in a screw-top jar until smooth. Add to skillet along with milk. Cook and stir until thickened and bubbly; add cubed and softened cream cheese. Cook and stir until cream cheese is smooth. Remove from heat. Stir in lemon juice. Add pasta mixture, chicken mixture, carrots, snap peas, tomatoes, and sweet pepper. Toss to coat. Turn into an ungreased 13x9x2-inch baking dish or shallow 3-quart casserole. Sprinkle the Parmesan cheese over the top. Bake, covered, in a 350 degrees F oven for 30 to 35 minutes or until heated through.
