Tomato Sauce and Braciole Recipe

Summer is here and it is the season for fresh grown tomatoes. This is the perfect time to make your home made tomato sauce supply for the year. Ingredients:
7 Thin Strips London Broil – Braciole
3 Strips of Pork Ribs
4 Jars of Tomato Sauce
10 Cloves of Garlic
1 Whole Onion
Handful of Parsley
Hot Pepper flakes
3 Hot Chili Peppers
Oregano
Parmesean Cheese
Flour
Extra Virgin Olive Oil
1/4 Cup of White Wine
Bring 4 jars of homemade tomato sauce to a boil. Dice up 5 cloves of garlic and the parsley. Place some garlic, parsley, hot pepper flakes and parmesean cheese in the middle of each thin strip of beef. Roll up each of the strips of the beef to make your brasciole. Once rolled up, place a toothpick on each end of the beef roll to keep it from opening up. Next chop up another 5 cloves of garlic and a whole onion. Place the garlic, onion, 3 chili peppers and a few tablespoons of olive oil  in a frying pan and fry on high until slightly golden.While frying the garlic and onion, cover the brasciole with flour. Then add the flour covered brasciole and the 3 strips of pork ribs onto the frying pan. Turn every few minutes to cook evenly. After 8 minutes, add 1/4 of a cup of dry white wine to the frying pan. Let fry for 5 minutes until the wine is reduced and make sure not to let the garlic and onion burn. Now add all of the contents of the frying pan into the the pot of boiling tomato sauce. 
Tips: Buy a thick strip of meat at the store and place in freezer for 15 minute to make it firm. Then cut very thin slices of the meat to make your brasciole. This will save you some money.
