This salad is so refreshing and delicious. I love the freshness of the mint and the crunchiness of the onions, combined with the sweetness of the chicken. Very nice combination. Enjoy!
-2 chicken breasts, boneless, skinless
-1/2 onion, thinly sliced
-6 green onions, sliced
-1 Tbs dried mint leaves
-1 Tbs dried cilantro leaves
-1/2 head of lettuce, chopped
-1/2 cup fresh lime juice (from 4-5 limes)
-1/4 cup fish sauce
-4 Tbs Thai sweet red chili sauce
Coat a large skillet with cooking spray. Cut chicken into chunks. Season generously with seasoned salt, garlic powder and pepper. Cook in prepared skillet until golden brown. Let it cool.
Mix cooked chicken, onion, green onions, mint, cilantro and lettuce into large salad bowl.
In a smaller bowl, combine lime juice, fish sauce and chili sauce. Mix well and pour over lettuce mixture. Give it a good stir. Enjoy!
