One word: Fabuloso!
Mum has cooked this meal since always, really!, mostly in summer and when loads of us where around the table. It is a great dish if you have a lot people to cook for, if you are planning a “busy day” and you want to have a stress free lunch or dinner, or if you have been asked to bring something to a party as it is very nice to eat when it isn´t hot.
Today we had the chicken with a green leaves salad, but you can garnish the dish with your favorite salad or french fries. We will post the recipe for Russian Salad, that is mum´s favorite match to this chicken.
Oil the pan then add the chicken, garlic cloves and salt. Place on a low heat and cover.
Cook the chicken until golden brown, stiring frequently.
Using a pestle and mortar crush garlic, pepercorns and salt. Then add a handful of chopped parsley and the vinegar.
When the chicken is cooked add the mix and let it all cook together for a few minutes until the juices have thinkened and the vinegar has caramelized. Let it rest in the pan and serve with the juices.
I have used dried parsley today, but it is always better if you use fresh if you can get it.
