Mascarpone And Berries Ice Cream

I discovered this recipe a few days ago and couldn’t resist not making it. What can be better on a hot summer day then a refreshing and delicious ice cream?

   – 200 g mascarpone cheese
   – 250 g  double cream
   – 3 tbsp icing sugar
   – 150 g berries
   – a handful of blueberries

Mix the double cream with the mascarpone cheese until soft and fluffy. Next add the icing sugar, berries and fold them in using a spatula. Put the mixture into a casserole dish and place the blueberries into the mixture to form a pattern. Finally put the dish in the freezer for 3-4 hours or until the ice cream is frozen. To make your little ones smile make sandwiches by placing the ice cream between two biscuits.
