I love pancakes and they are my comfort food, today I didn’t feel the best so what better time to try some delicious banana pancakes.
– 55 g butter
– 275 g self raising flour
– 1 tsp baking flour
– 2 eggs
– 2 tbsp soft light brown sugar
– 300 ml milk
– 1 large banana or 2 small ones
– 1-2 tbsp oil for frying
In a bowl mix the flour, sugar, baking powder, eggs, milk and melted butter. Mix everything together until smooth. Mash the banana and add it to the pancake mixture.
Brush the pan with a little oil before adding enough mixture to cover the bottom.
Cook on a low heat for 2-3 minutes or until bubbles appear on the surface.
Serve with golden syrup, slices of strawberries or even strips of bacon for a yummy breakfast.
