This is just one of those dishes I discovered while traveling. Simple to make, fun to eat, and easy to impress.
Full time: 15-20 minutes
Serves 4
You will need:
1 lb. fresh or frozen English peas, substitute sweet pease for English if desired.
2 tbsp butter
1 tbsp fresh mint, chopped fine
1 tsp sugar
1/2 tsp salt (additional for cooking)
1/2 tsp ground black pepper
Let us begin:
In a small pot bring 1/4 cup salted water and peas to a boil.
Cook 4 minutes for fresh or 8 minutes for frozen.
Drain peas in a colander.
Using same pot, combine butter and sugar, melting butter over a medium high heat.
Add in salt and pepper.
Add in peas, stir to fully coat.
Add in mint and stir to fully incorporate.
Lower heat to low/simmer and cook, just to reduce butter a bit approximately 3 minutes.
Move to serving bowl and enjoy!
