Deconstructed prawn toasts recipe


  • 150g butter
  • 450g king prawns, peeled, but tail shell left on
  • 1 red chilli, finely chopped
  • 200g brioche breadcrumbs
  • Juice and zest of 1 lemon
  • 1 tbsp sesame seeds
  • 1 tbsp soy sauce
  • Oil, for frying
  • eggs, beaten
  • 2 spring onions, finely chopped


  1. Melt the butter in a pan, add the prawns and chilli and cook for 3-4 minutes until the prawns are just cooked through.
  2. Add the breadcrumbs, lemon, sesame seeds and soy sauce to the pan. Keep stirring until it forms a buttery crumb.
  3. Heat a slash of oil in a separate pan, then add a quarter of the egg mix. Quickly tilt the pan so it spreads evenly over the bottom to form a thin pancake, then top with a quarter of the spring onions and cook for 2 minutes until set. Tip out on to a tray and repeat this process with the remaining mix.
  4. Roll one pancake up at a time and slice thinly into long ribbons.
  5. Serve the egg ribbons on top of the crumbed prawns.
