Banana fritters are a traditional Caribbean dessert. When you think of the Caribbean, you think of warm beaches, be averages served in pineapples with little umbrellas, bright patterned shirts, and spicy foods. A banana fritter is a great one bite treat which can transport you right to the heart of the Caribbean.
I like to serve these alongside vanilla ice cream for a fun family dessert!
Full time 25 minutes (includes cooking in multiple batches)
Makes 18-24 fritters
You will need:
4 ripe bananas
2 eggs, beaten
2/3 cup flour (possibly more)
1/4 cup sugar
1 tsp baking powder
1/2 tsp cinnamon
1-2 cup vegetable oil
1/4 cup sugar
Let us begin:
In a large bowl mash bananas.
Add in eggs and give a quick stir.
Add in remaining ingredients and stir to full blend.
You want you dough to be loose, but not runny. Since you are spooning this, you need it to stay together and not spread. If you feel it is too runny add a tiny bit if flour, stir and check.
In a deep heavy frying pan, pour oil until it is roughly 1/3-1/2″ deep. Heat oil over medium-high heat for 5 minutes.
Gently spoon 1 tbsp dough balls into oil. I recommended doing 4-6 at a time based in pan size.
Cook 2-3 minutes per side, until golden in color.
Remove from hot oil and place on a paper towel lined plate.
Repeat until all dough has been used.
Once they have all been cooked and allowed to drain of excess oil. You can sprinkle across sugar.
Move to serving plate. Serve and enjoy!
