Breakfast Casserole

You can’t really get a good looking picture of this type of dish.  However, we all know that it is quite delicious, despite the appearance.  🙂  There are many versions of this particular dish.  This is my favorite one.  I also love that you combine everything the night before, then simply bake it in the morning.  Enjoy!

-1 lb pork sausage
-6 slices honey wheat bread, cubed
-2 cups shredded cheddar cheese
-6 eggs
-1 tsp salt
-2 cups milk
-1 tsp dry mustard
-4 oz sliced mushrooms (drain, if using canned)
-1/2 green pepper, diced
-4 green onions, sliced
Brown the sausage and drain.
Layer bread cubes on bottom of a well greased 9×13 casserole dish.  Sprinkle sausage over bread.  Add the cheese.
Beat the eggs and mix with remaining ingredients.  Pour evenly over cheese.  Cover and refrigerate over night.
Preheat oven to 375 F.  Bake for 45 minutes.  Enjoy!
