“Beets” Chocolate Cupcake’s.
Beet’s,,,,,, are you crazy, NOPE !!! The beets with the chocolate gives it a rich creamy taste. But don’t worry, you will not taste the beets, only it’s goodness…:)

Recipe;
Cake
– 3 ounces unsweetened chocolate, or powder.
– ¾ to 1 Cup Shredded beets, drained.
– ½ Cup melted butter.
– 1 Cup (or more) white sugar, or 2 cups brown sugar.
– 2 eggs.
– 1 teaspoons vanilla extract.
– 2 Cups all-purpose or cake flour.
– 2 teaspoons baking soda.
– ½ teaspoons baking powder.
– ½ teaspoon salt.
– ½ Cup buttermilk (milk for extra, if needed).
Frosting
– 1 Cup Heavy or light cream.
– 2 Tablespoons butter.
– 1 teaspoons vanilla extract.
– I Cup unsweetened chocolate, or ½ cup powder.
– Icing sugar till stiff.
