Cottage Cheese Eggs
INGREDIENTS:
2 Eggs
2 Tablespoons Cottage cheese (Small Curd 4% Milkfat)
1 Teaspoon Mexican Seasoning (Or Chili powder)
DIRECTIONS:
1. Preheat a large metal or non-stick skillet to medium heat.
2. Whisk eggs and cottage cheese together in small container,
place in skillet.
3. Sprinkle Mexican Seasoning on eggs (to taste).
4. As eggs begin to cook start folding together, trying to keep
wet sides down till done cooking.
