Spinach Fettuccine
INGREDIENTS:
1-10oz frozen spinach package, thawed, chopped
3/4-lb fettuccine
2-tbsp butter
1-onion, chopped
1-red pepper, diced
2-cloves garlic, minced
11/2-tsp dried basil
3-tbsp all-purpose flour
21/4-cups milk
1-cup grated Parmesan cheese
3-tbsp tomato paste
3/4-tsp salt
1/4-tsp ground nutmeg
Pinch- cayenne pepper
DIRECTIONS:
1. Place thawed spinach in a sieve. Remove water by firmly
pressing the spinach with the back of a spoon, or by
squeezing by hand. Set aside Cook pasta according to package
instructions. Meanwhile, melt butter in a saucepan over
medium heat. Add onion, red pepper, garlic, and basil;
cook 3-5 minutes. Stir in flour. Gradually whisk in milk
making sure there are no lumps. Stirring, bring to a boil;
reduce heat and simmer for 1 minute. Stir in spinach, 1/2-cup
Parmesan, tomato paste, salt, nutmeg, and cayenne pepper.
Toss sauce with fettuccine. Serve with remaining Parmesan
