Strawberry Shortcake
INGREDIENTS:
3 eggs
1 cup white sugar
1 cup all-purpose flour
1 tablespoon milk
1 tablespoon butter, melted
1 cup heavy cream
2 tablespoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon coffee flavored liqueur
2 pints fresh strawberries, halved
DIRECTIONS:
1. Butter and flour an 8x8 inch baking dish and line
bottom with parchment paper.
2. In a medium bowl, beat eggs with 1 cup sugar until
foamy. Fold in flour. Stir in milk and butter. Pour into
prepared pan.
3. Place pan on a rack in a hot steamer. Steam over high
heat 25 to 30 minutes, until cake springs back when touched
lightly in center. Invert on wire rack to cool completely.
4. Whip cream with 2 tablespoons sugar until stiff peaks
form. Fold in vanilla and liqueur.
5. Slice cooled cake into three layers. Layer with whipped
cream and strawberries. Serve at once.
